What is Champagne?

Champagne is a sparkling wine, which is produced in the Champagne region in France.
White champagne is the best known, but there is also rosé champagne.

How is Champagne made?

The method by which champagne is made is called Méthode Champenoise.
One of the essential things is that the still wine (that's what you call a wine without bubbles) undergoes a second fermentation in the bottle.
With the stopper on so that the carbon dioxide bubbles cannot escape. This is how you get a sparkling wine. The making of Champagne consists of the following steps:

  • Harvesting the champagne grapes
  • Pressing the champagne grapes
  • Alcoholic fermentation (the first fermentation)
  • Malolactic fermentation - Fermentation by bacteria
  • The assembly - The blending of the different stills to keep the taste of the champagne consistent
  • Tirage and second fermentation with liqueur de tirage - Fermentation in the champagne bottle
  • Maturation
  • Remuage, dégorgement and dosage with liqueur d'expedition - Removal of the dead yeast
