What is Advocaat?

Advocaat is a thick yellow drink made from neutral alcohol or brandy, chicken eggs and sugar or honey.
The bright yellow colour is not only due to the eggs, but also to the addition of a little yellow food colouring.

Where does Advocaat come from?

It is not entirely clear where the name Advocaat comes from. Some people associate the name with the tropical avocado fruit.
A liqueur that resembles Advocaat used to be made in the Antilles, with avocado as the main ingredient.
Due to a lack of cheap avocados, the avocado was replaced by eggs in the Netherlands.

What types of Advocaat are there?

There are 2 types of Advocaat, a thick and a pourable variant. The real thick advocaat is mainly sold in the Netherlands.
This is usually not drunk, but eaten from a liqueur coupe with a spoon. A dollop of whipped cream is often added as a garnish.
Thick advocaat is made from whole eggs, i.e. the yolk and the white.
The thin pour version of advocaat is mainly intended for export. Only the egg yolk is used for this. The minimum alcohol content of advocaat is 14%.
