How do I create a Horse's Neck 2 cocktail?

1. Fill a highball glass with ice.
2. Then pour the Cognac and then the Bitter.
3. Top up with Ginger Ale and garnish with horse head.
4. Horsehead: Remove the peel from a lemon and try to keep it whole.
5. Place the peel over the rim of a highball glass so that the side with the knot hangs in the glass and most of the peel is outside the glass.
