Cocktail Recept: Bellini

A Bellini cocktail contains the following ingredients:

• 1 pair Peaches
• 1 bit Prosecco 

Peel and core the peaches.
Puree the peaches in a blender or with a hand blender.
Pass the puree through a fine sieve.
Place 2 tablespoons of this fruit puree in a champagne glass.
(What is not used can be frozen and stored for later use.).
Now first pour a dash of prosecco into the glass.
Then slowly fill the glass further.
This prevents the wine from bubbling over the edge.
For variation, you can replace the peach with, for example, fine puree of strawberries, raspberries or blackberries.
