the reason that i have written two books on basically the same subject, pubs and restaurants.<br />very few publicans will read a book on restaurants if they are buying a pub, very few restaurateurs will read a book on pubs if they are buying a restaurant. there is a lot of business commonality in both fields which i have included in both books, but having owned both pubs and restaurants, prioritised the key information in both.<br />both businesses can be vastly different, depending on the way that you run them, yet a gastro pub/bistro is a pub doing very good food.
